Roasted Chicken

Ingredients
  1. 2kg or 4lb whole chicken (fat removed)
  2. 1 large lemon, juiced
  3. 1 tbsp or 15 mL olive oil
  4. 6 garlic cloves, minced
  5. Herbes de Provence
  6. 500g or 1lb fresh baby spinach, rinsed
  7. Black pepper
For the Chicken
  1. Preheat the oven to 200 C or 392 F.
  2. Prepare a large baking dish and set aside.
  3. Combine and mix lemon juice, olive oil, garlic, herbs, salt and black pepper in bowl.
  4. Rub the mix all over the chicken.
  5. Put chicken into baking dish, roast in center of oven for 2 hours or until the juices run clear and the meat is tender.
  6. During roasting time, baste the chicken with its juice.
  7. Don't let the chicken dry - if it's drying out, cover with aluminum foil.
For Spinach
  1. Heat a bit of olive oil in pan and add garlic.
  2. Add baby spinach and cook.
  3. Season with salt and pepper.
  4. Add lemon juice.
Notes
  1. When the chicken is cooked through, let it sit for 10 minutes. Serve with spinach and mashed potatoes, or vegetables of your choice.

Ingredients
  1. 1 pound or 450 g lean ground beef
  2. 1/4 - 1/2 cup or 100 - 50 g brown sugar
  3. 1/4 cup or 240 mL soy sauce
  4. 1 tbsp or 15 mL sesame oil
  5. 3 cloves garlic, minced
  6. 1/2 tsp or 2.5 mL fresh ginger, minced
  7. 1/2 - 1 tsp or or 2.5 or 5 mL crushed red peppers
  8. Salt & pepper
  9. 1 bunch green onions, diced
Instructions
  1. Heat large skillet over medium heat.
  2. Add beef with garlic in the sesame oil.
  3. Drain fat and add brown sugar, soy sauce, ginger, salt and pepper, and red peppers.
  4. Simmer for a few minutes.
  5. Serve over steamed brown rice and top with green onions.

Ingredients
  1. 2 - 3 tbsp or 30 - 45 mL olive oil
  2. 4 large carrots, sliced
  3. 1/2 bunch of celery with leaves, chopped
  4. 2 medium-sized onions, chopped
  5. 4 large cloves of garlic, minced
  6. 1 large green pepper
  7. 1 large red pepper
  8. 1 small head of broccoli, chopped
  9. 4 large vine ripened tomatoes, chopped
  10. 1 cup or 150 g fresh mushrooms, sliced
  11. 15 oz. or 425 g diced tomatoes
  12. 15 oz. or 425 g corn
  13. 1.5 cup or 225 g fresh or frozen peas
  14. 1.5 cup or 225 g fresh or frozen fine green beans
  15. 3 potatoes, diced with skin on
  16. 10 cups or 2.4 L of water
  17. 3 tbsp or 90 g tomato paste
  18. 3 large bay leaves
  19. 1/4 cup or 30 g dried basil
  20. 1 tbsp or 20 g sea salt
  21. 1/2 tsp or 3.5 mL black pepper
Instructions
  1. Coat your stock pot with olive oil and warm on medium heat.
  2. Start with the carrots to saute your vegetables.
  3. Add one vegetable at a time until sauteed, while stirring.
  4. Slowly add the water, tomato paste, bay leaves, basil, salt, black pepper and crushed red pepper.
  5. Stir, cover and turn heat to low-medium.
  6. Let simmer on your stove top for 2.5 hrs.
Notes
  1. Let your soup simmer while you watch your favourite movie!
  2. Oh, and you can just use whatever you find - you don't have to follow the recipe to a T!
