Sumac’s health benefits

Known as being a great antioxidant, Sumac also helps lowering blood sugar by regulating the levels. Not only, Sumac would also clear colon and liver from oxidized free radicals and facilitate your digestion. As a good diuretic, it has the faculty to reduce fevers coming from colds and flues. 

Sumac berries are full of Vitamin C, Omega 3, and are famous to be an antimicrobial agent. Also used as an anti-inflammatory, those berries are of great help for arthritis and skin inflammation. 

Sumac in Lebanese cuisine

Sumac Spiced Oven Fries with Garlic Spread

Ingredients
  1. 4 russet potatoes
  2. 1 ts of olive oil
  3. some salt
  4. 1 head garlic
  5. 2 ts of sumac
Instructions
  1. While peeling the potatoes, preheat the oven up to 180°C.
  2. Cut one potato in half, leaving one half aside.
  3. Slice the other potato in strips, not to thick.
  4. Paint them with olive oil and seasoned them with salt.
  5. Bake for half an hour, and don't forget to stir them every 10 min.
  6. Now take the remaining potato and roughly chop it in half.
  7. Cook it in slated boiling water till it is ready to be mashed with a fork.
  8. Meanwhile, press the head of garlic to make a paste.
  9. Place the garlic in a blender and add 2 ts of mashed potatoes and same amount of water.
  10. You can add more of the two as you want the spread to come together.
  11. Don't try to make it creamy as it won't.
  12. When the fries are golden, remove them from the oven and add some Sumac.
  13. Spread to be served on the side.
