  1. 1 Red Bell Pepper;
  2. Salt and Pepper to Taste;
  3. 1/2 Cup of Olive Oil;
  4. Cleaned Portobello Mushroom: 4 Caps
  5. Onion: 4 Slices
  6. 4 Burger Buns Split;
  7. Mayonnaise: 4 Tablespoons
  8. 4 Tomato Slices;
  9. 16 Basil Leaves.
Instructions
  1. Preheat an outdoor grill for medium-high, and lightly oil the grill.
  2. Grill the red bell peppers until the skin is completely charred, 10-15 minutes
  3. Optional: Place the red bell peppers in a paper bag, allow them to cool down, then peel and set aside.
  4. Mix the oil, salt, and pepper and brush the smooth side of the mushroom with the mix.
  5. Grill the mushrooms (smooth side down) until they shows grill marks, approximately 3 minutes. Do the same for the other side, then set the mushrooms aside.
  6. Grill the onions until soft and brown, approximately 2 minutes.
  7. Toast the buns on the grill, for about 1 minute
  8. Mix the roasted garlic and mayonnaise in a bowl, then spread some on the bun (to taste)
  9. Assemble the burger with 1 mushroom cap, 1-2 slice(s) of mozzarella cheese, 1 slice of tomato, 4 basil leaves, 1 slice of grilled onion, and 1/4 the roasted red pepper slices. Repeat for remaining sandwiches.

Ingredients
  1. 1/4 cup soy sauce
  2. 3 Tbs. rice vinegar
  3. 3 garlic cloves, minced
  4. 2 Tbs. Asian red chili paste
  5. 2 Tbs. toasted sesame oil
  6. 1 tsp. grated orange zest
  7. 3/4 lb. firm tofu, cut into 1-inch cubes
  8. Vegetable oil for grill
Instructions
  1. Mix the soy sauce, vinegar garlic, chili paste, sesame oil and orange zest in a bowl that will fit the tofu later.
  2. Add the tofu to the bowl, and mix gently to coat. Then cover the bowl and leave in the fridge for 1 to 24 hours.
  3. Prepare a hot fire in a grill and oil the rack well. If using wooden skewers, soak them in water for 30 minutes.
  4. Put the tofu onto skewers, reserving the marinade.
  5. Place the skewers on the grill and cook, turning them once and pour the reserved marinade onto the tofu frequently, until browned on both sides, 4 to 6 minutes total. Serve immediately.

Ingredients
  1. 1 onion, finely chopped
  2. 4 tsp olive oil
  3. 4 garlic cloves, finely chopped
  4. 2 tsp ground cumin
  5. 1 tbsp tomato purée
  6. 400g can pinto/kidney beans, drained and rinsed
  7. 3 courgettes, sliced on the diagonal
  8. 175g cheddar, grated
  9. 1 green chilli, finely chopped
  10. large handful coriander, roughly chopped
  11. 8 flour/pita tortillas
Instructions
  1. Heat half of the olive oil in a pan, and fry the onion.
  2. Add garlic and cumin, and stir through over low heat for about 1 minute.
  3. Put together the tomato puree, pinto/kidney beans ,and a few tablespoons of water
  4. Heat through, then mash the beans and add some seasoning
  5. In another pan, toss the zucchini with the remaining olive oil and seasoning, and grill on a griddle pan until grill marked on each side.
  6. Combine the cheese, chili, and coriander in a bowl
  7. Assemble the quesadilla by putting the beans puree on half of the tortilla, then top with zucchini slices and cheese mixture.
  8. Cover with the other tortilla half, and cook on the BBQ until the cheese begins to melt and the tortillas crisps (1- minutes each side, medium heat)
