Like all great chefs, Chef Elia believes that love is the ultimate ingredient and that a passion for cooking is an essential element to becoming a great chef. At a very young age, Elia was inspired by his mother’s cooking. She taught him traditional and authentic recipes. He watched her and practiced her recipes. He had always loved traditional food and he has passionately cooked street food from almost every cuisine available. Chef Elia loves to cook so much that he has abandoned a 35-year career in finance to be a full-time chef.

Chef Elia’s Pan Bagnat

For those who don’t know the Pan-bagnat, it is a speciality sandwich from the region of Nice, France. The bread used is called pain de campagne, typically whole wheat bread formed in a circle. It is filled with the classic Salade Niçoise, a salad composed mainly of raw vegetables, hard boiled eggs, anchovies and/or tuna, and olive oil. The Pan-bagnat sandwich is a well known lunchtime dish in the region around Nice, you can find it in most bakeries and markets.
