Ingredients
  1. 80 ml of sunflower oil (or alternatively 40 g of butter)
  2. 3 chopped onions
  3. 3 finely chopped cloves of garlic
  4. 3-4 thinly sliced pepper plant (green and red)
  5. 1 kg of coarsely chopped tomatoes
  6. 1 kg of chicken cut into pieces (can be a chicken breast or an entire chicken)
  7. 150 ml of white wine
  8. 250 ml of chicken stock
  9. some mixed herbs
  10. salt and freshly ground black pepper
Instructions
  1. Heat 40 ml of sunflower oil (or butter) in a deep cooking pot over medium heat, then add the onions and garlic and cook them until they golden. Add the pepper plant and tomato, reduce the heat to low and boil slowly for 20 minutes.
  2. Meanwhile, in another cooking pot, heat the remaining oil (or butter) over high heat. Add the chicken pieces and cook until they golden, then remove them from the pan.
  3. When the pepper plant and tomato sauce has been cooking for 20 minutes, add the browned chicken, the wine and the chicken stock.
  4. Cover and boil slowly for 35 minutes. Remember to mix and taste regularly. Add the mixed herbs, salt and pepper.
Notes
  1. To accompany your delicious Chicken Basquaise, suggestions could be rice and/or vegetables such as zucchini and eggplants which mix perfectly with it.
