The first thing to do is to get the vegetables. For that, you need a quick visit to your local grocer to get the freshest ingredients possible. You will need 5 medium sized tomatoes, light green pepper (cored and seeded), one long cucumber (cut into chunks), one small mild onion (preferably white), one garlic clove, one cup of sherry vinegar (more if you feel like it!), and finally 1/2 cup of olive oil.

Now its time to get cooking! Start by combining the tomatoes, pepper, cucumber, onion, and garlic in the blender. You can also put them in a deep bowl if you are blending by hand (quite the exercise). Blend the mixture for at least two minutes at high speeds. Don’t forget to pause frequently and scrape the bottom with a spatula. 

Afterward, with the blender still running, add the vinegar and the oil with two tablespoons of salt. the mixture will slowly become creamy and emulsified. It will be similar in texture to a dressing. If you feel that it remains watery, then add more oil until you reach the desired level of creaminess. The color will now be orange or dark pink, just like a lovely summer smoothie!

You might have to strain the mixture if it remains too thick. We leave the desired level of thickness up to you. Then transfer the mixture into a pitcher and chill it until it gets very cold (around 6 hours)
