A play on the Penicillin, a cure-all cocktail comprising of blended scotch, lemon juice, honey ginger syrup with a float of Islay scotch for good measure.

For cocktail
  1. 1 3/4 oz. blanco tequila
  2. 1 oz. lemon juice
  3. 3/4 oz. ginger syrup
  4. Mezcal float
  5. Candied ginger, for garnish
For syrup
  1. 1 cup raw sugar
  2. 1 (6-inch) piece ginger, peeled and thinly sliced
For the ginger syrup
  1. Combine raw sugar, ginger, and 1 cup water in a 2-qt. saucepan over high; boil. Reduce heat to medium and simmer 5 minutes; chill overnight, then strain, discarding solids.
For the cocktail
  1. Combine tequila, lemon juice, and ginger syrup in a cocktail shaker filled with ice; shake vigorously and strain into a rocks glass with one large ice cube. Top with mezcal and garnish with candied ginger.
