Flavorful Slow Cooked Chicken with Turmeric & Asian Spices – Karahi Chicken Recipe

Chicken Karahi cooks slowly. this epic concoction bathes in delicious herbs so it is quite tender.  You don’t want to under-cook your chicken obviously and at the same time, if you overcook it you end up with a dry and rubbery meat (Good luck chewing on that).

This is where the beauty of the Karahi Chicken lies.  It marinates in a magical potion of Asian spices and herbs, until it is tender and juicy. This is melt-in-your-mouth goodness at its best. Karahi is actually a traditional oriental vessel that is very similar to a wok. It is a wok-like plate that allows the chicken and the spices to fully mix together.  So grab your Naan bread and enjoy this delicious ride.

(PS: Karahi Chicken is a favorite here at ChefXChange, if you are in Beirut make sure to check our very own Mama’s Tabkha meal service:  Karahi Chicken is featured there on many occasions)

The ingredients necessary for the Karahi chicken recipe are very straightforward and readily available in any corner store. Just make sure you pick them as fresh as you could since you want to release the maximum flavor out of the chicken

  • Chicken (small pieces) 500 gm
  • Tomatoes roughly ground 3
  • Ginger finely sliced 2 tbsp
  • Garlic and ginger paste 2 tbsp
  • Green chilies 4-5
  • Fresh green coriander 1 bunch
  • 1 tsp of crushed dry coriander
  • 1 tsp of crushed cumin seeds
  • Crushed red chili 1 tbsp
  • Turmeric powder 1/2 tsp
  • Salt to taste
  • Oil 1/4 cup

Heat oil in a wok and add the garlic and ginger paste. See if the oil is smoothly flowing and coating the bottom of the wok to know if it’s hot enough. After adding the garlic and ginger paste, stir-fry these ingredients for a few seconds. Then add the crushed coriander and cumin. You have to stir them well.  you want to make sure that all the ingredients are evenly distributed so you can have a uniform flavor.

Add the chicken. You should cook the mixture for one to two minutes constantly stirring. Next up, add the green chilies and the coriander. For maximum flavor, you can put one of the chilies facing down on the Karahi. Make sure to keep mixing the ingredients as well as you can. Finally, add the ground tomatoes, salt, crushed red chili, and turmeric. Close the lid and let the mixture cook until the chicken is ready and the water has dried out.

You can now garnish your dish with sliced ginger, green chilies, fresh coriander or parsley (get creative with it).
