National Soup Month (With a Recipe)

January is the National Soup Month and like any other national food day or month, we like to celebrate it! We believe that January was specifically chosen to be National Soup Month, because a) it’s cold, b) soup makes us warm, c) soup is packed with health benefits to help us if we are sick and also to prevent sickness. We also have another theory of our own, since it’s the month after the holidays and everyone is broke, soup is a cheap and healthy option, AND will help us save cash.


We have shared few of our favorite soup recipes before on our blog, like lentil soup and asparagus velouté. Today we are sharing another one of our favorites, creamy broccoli soup. Creamy broccoli soup is great, it’s hearty, full of health benefits and broccoli is a great detox ingredient to help you cleanse after the holidays. This month also happens to be Veganuary, which means our vegan foodies can also enjoy this delicious recipe and celebrate the national soup month but only substituting the regular milk with soy milk, and the butter with margarine. 

 

National Soup Month

 

This recipe is super easy to make. Let’s learn how to make it!

  • First you start melting the butter (or margarine) over medium-high heat. Once the butter is melted, add the onions, carrots, broccoli, salt and pepper sauté them from about 5-7 minutes.
  • When the vegetables are translucent, add the flour and cook for about 1-2 minutes until flour is blonde (be careful not to burn it!). Then, add the stock and bring it to boil. 
  • Reduce heat to medium and make the soup simmer for about 15-20 minutes until broccoli is tender. 
  • Pour in the cream (or soy cream) and stir very well. With an immersion blender, blend or puree the soup and let it simmer more.

  1. 4 tablespoons butter, room temperature
  2. 1 1/2 pounds fresh broccoli
  3. 1 large onion, chopped
  4. 1 carrot, chopped
  5. Salt and freshly ground black pepper
  6. 3 tablespoons all-purpose flour
  7. 4 cups low-sodium chicken broth
  8. 1/2 cup cream
Notes
  1. 1 cup of cream = 1 tablespoon butter and 7/8 cup of milk)
