Pineapple Fiesta Salad

This week, we had a very special visitor in our Beirut office. Chef Joseph paid us a visit and the whole team got to taste his delicious creations. We also got to watch as he prepared a pomodoro & pomegranate chicken, spicy white chocolate beef and for dessert grilled tequila strawberries with vanilla ice cream. You can check out the menu here.

Chef Joseph also made us a salad using a pineapple as the bowl. Now some of you might think that this is a normal fruit salad, but Chef Joseph is all about fusion. He loves mixing flavors and combining sweet and salty flavors . So if you want to learn how to make this delicious salad then check out the video below. Start by cutting the pineapple in half. Then empty it out using a spoon. Save the pineapple to use it later on.

Place the shredded lettuce in the pineapple and add the rest of the ingredients for the salad. Place the kiwi, pineapples, and cherry tomatoes delicately on top of the lettuce.  

To make the dressing, mix together olive oil, lemon juice and blue cheese. Season with salt and pepper to taste.

Drizzle the dressing over the salad and enjoy!

For the Salad
  1. 1 large pineapple
  2. 1 kiwi
  3. 1/2 box of cherry tomatoes
  4. 1 head of lettuce
For the Dressing
  1. 2 tbsp of blue cheese
  2. 3 tbsp lemon juice
  3. 2 1/2 tbsp olive oil
  4. salt and pepper to taste
