Authentic Carbonara Recipe

Our Authentic Carbonara Recipe is a traditional pasta dish from Rome, Italy. It is made of pasta, hard cheese, guanciale or pancetta and pepper. Normally pecorino is the choice for this dish, however, it can be substituted. Bacon is another substitute used outside Italy. In history, the dish has no records prior to the second world war. Today I will share an authentic version of this dish with you all.

Authentic Carbonara Recipe

To start put a large pot of water to boil

Meanwhile, add the olive oil to a frying pan

Fry the guanciale, keeping it soft

When the water boils add salt and spaghetti

Follow your favorite brand instructions for cooking time

While the pasta is cooking lets prepare the eggs

Whisk the eggs well in a bowl and add the black pepper

Once the pasta is cooked drain well 

Add the pasta back to a pot and mix in the eggs

Keep it in a low heat

If the eggs start to cook too fast they will scramble

Remove from the heat and keep mixing as necessary until the egg is cooked

It should be a glossy creamy consistency

Now add the guanciale or pancetta

Add the grated pecorino

Season to taste
