Start by cutting the beef into chunks

Heat a frying pan with olive oil on high heat

Season the beef and fry until dark brown

Do it in batches and drain in a colander over a bowl

It is important to achieve a good caramel like color as that will add flavor to the dish

Now time to cut the bacon into lardons

Using the same pan, repeat the process with the bacon

In the same pan add a little more olive oil

Add the onions and fry for 3 minutes

Add the mushrooms and garlic and fry until golden brown

Deglaze the pan with the red wine

Transfer the remaining liquid to a casserole pan

Reduce the wine by two thirds

Bring it to a boil then simmer for 2 hours or until the meat is tender
