Today’s Best Dessert Recipe: Praline Éclair recipe is one of my favorites. Some food historians attribute this marvelous creation to the famous Chef Antoine Carême. An Éclair is an oblong shaped pastry made of choux and filled with cream.

Praline Éclair Recipe

Best Dessert Recipe: Praline Éclair Recipe

Starting with the choux pastry

Preheat the oven to 200C

Line a sheet pan with a silicon math or parchment paper

Bring the water, butter, salt and sugar to a boil, them remove from the heat

Add the flour at once and stir hard until all the flour is incorporated

Scrape the mixture into a mixer fitted with a paddle attachment

Mixing at medium speed, add 1 egg at a time

Mix until the dough is smooth and the eggs are well incorporated

Use a pastry bag fitted with a large plain tip

Pipe wide lengths of dough onto the lined baking sheet, of approximately 12-15cm

Bake for 35 minutes or until golden brown and fully cooked

Remove from the oven and let it cool down

Now for the praline cream

Using a mixer with a paddle, cream the butter until fluffy

Mix the Pastry cream and the Praline in a separated container

Change the mixer to a whisk and add the praline cream to the butter

Whisk well until well aerated

Cut the eclairs in half, length way

Using a pastry bag fitted with a medium-size flat tip

Pipe waves of the praline cream on the bottom half of the pastry

Add the top half of the pastry

Dust with icing sugar
