A special thing about this semolina grain is that it stores the flavor of whatever it’s doused in. In other words, you can customize these tiny tender balls to your preference by tempering with the spices. 
Speaking of customization, you can replace the chicken with another meat if you prefer to do so. 

You can serve Moghrabieh as a main dish during lunch or dinner. It both looks and tastes yummy! 

In order to preserve the texture of the Moghrabieh grains, we highly recommend not mixing the chicken and the sauce with the moghrabieh until you serve the dish. You can present them in the same dish (as shown in the picture) or separately. Another advantage is that you can store the left-overs to eat the next day, so no food waste!

Instructions
  1. Marinate the chicken in a mix of vinegar, salt and water. Leave it for 10 minutes.
  2. Rinse the chicken and put it in a deep pot. Add vegetable oil and season the chicken with the spices and cook for about 7-10 minutes. Make sure you flip over the chicken to brown up both sides!
  3. Pour water in the pan (around 6-8 cups) until the whole chicken is covered. This is where you add the cinnamon sticks, bay leaves, salt, cloves and black pepper. Cook the blend at 200°C for 30 minutes.
  4. In the meantime, peal the shallots. You will add them to to pan to cook with the chicken for the last 15 minutes.
  5. Next, drain the chickpeas from the water, as you will add them to the pot along with the shallots and the spices (you can customize the spices to your taste).
  6. In a separate pan, boil some water. When boiling, add the moghrabieh and let it cook for about 15-20 minutes till it becomes tender.
  7. Finally, clear out the pan containing the moghrabieh completely from water, and fry the content on low-medium heat for about 7-10 minutes. While frying, add a few ladles of the mix prepared in the other pan to flavor up the moghrabieh.
