This specialty dish is all about the sauce. You can use a filet or a whole fish, although a filet is much easier to prepare. Any type of white fish is a good choice. But the sauce can make it or break it. The main ingredient is Tahini, or a condiment made from ground toasted sesame seeds. Lemon, garlic, and spices are added to the sauce as well.

Instructions
  1. Massage the fish with white vinegar and salt, then rinse with water to remove any odor.
  2. Rub the fish filets with 1 tablespoon of olive oil and some lemon juice
  3. Transfer the fish to a cooking tray greased with olive oil, and bake at 150 Celsius /300 F for 20 minutes.
  4. Pour 1-2 tablespoons of olive oil in a medium sized pan, and cook the pine nuts on medium heat for 2-3 minutes until lightly browned. Stir occasionally as they can easily get burned.
  5. Grind half of the pine nuts with a mortar and pestle or a food processor. And leave the rest for garnishing.
  6. In a small bowl, mix the minced garlic, 1.5 cups of lemon juice, tahini, water, salt, coriander and chili pepper.
  7. Transfer the sauce to a pot, and simmer over medium heat until the sauce reaches a liquid consistency (10 minutes) . Stir constantly to prevent the paste from sticking.
  8. Add the pine nuts to the sauce once it is boiling, then simmer for 5 more minutes.
  9. once it is well done, spread the fish on a serving platter that is at least 2.5 cm deap, and pour the sauce on top.
  10. Garnish with pine nuts and freshly chopped parsley.
