When the vegetable-based ‘noodles’ started to be popular I was quite sceptical towards them. I thought for a long time that it was a bit of a gimmick and a fashion that would go away quickly. And then I gave in. For the first time I made zucchini bolognese and I absolutely loved it! This recipe for butternut noodles is no different! It’s a delicious dish that also happens to be healthy and vegetarian.

The fall is here and, Halloween aside, pumpkins and squashes of all sorts are definitely in season now. As we all know, it is best to eat vegetables seasonally. By doing that you make sure that you are using the best ingredients.

Squash noodles can be a lovely substitute for normal pasta. Especially so if you are trying to watch your calories or you are gluten-free.  The sauce in this recipe is delicious. Firstly, because you get the filling lentils as a base to your sauce. Secondly, because there is cream and mushrooms that will pull the flavours together.

Instructions
  1. In a wok, heat the olive oil and cook the butternut noodles on medium heat for a couple of minutes until they begin to soften.
  2. Add the mushrooms, lentils, and thyme and cook for 5 minutes.
  3. Pour in the cream and cook together for few minutes
  4. Season with salt and pepper and some Parmesan and enjoy!
