Today I will show you a Classic Italian Caponata Recipe.

Caponata is a traditional Sicilian recipe made with eggplant.

There are sweet and sour notes making it very tasty.

Caponata has several variations across Italy with additional regional ingredients.

It makes a great appetizer served with foccacia.

Italian Caponata Recipe

Classic Italian Caponata Recipe

Heat a medium sauce pan with olive oil

Add the onion and cook for 3-5 minutes until it becomes translucent

Add the garlic and cook for another 3 minutes

Now add the aubergines and cook until golden brown

Add the chopped tomatoes, sugar and vinegar

Simmer for 10 minutes or until the eggplant is tender

Remove from heat and stir in the chopped basil

Transfer to a serving dish and sprinkle with pine nuts

Caponata can be served hot or cold

It is delicious with freshly baked bread (see our foccacia recipe above)
