This festive cranberry sauce recipe uses ingredients that complement the flavours in your Christmas dinner. When making a cranberry sauce recipe, it’s important to counteract the tartness of the cranberries. The perfect cranberry sauce will use plenty of sugar, but this one uses cherry brandy too to give it that extra special twist.

If you don’t want to use brandy in your cranberry sauce, you can substitute in blood orange juice. This will have the same effect as the brandy, adding a bit of sweetness to the sauce. We recommend adding a bit more sugar if you’re using blood orange juice instead of cherry brandy. Add more sugar slowly and taste as you go to make sure that it matches your personal tastes. Instructions
  1. Put everything into a pan and let it bubble away until the berries start to pop, stirring every now and again with a wooden spoon. This will take about 10 minutes.
  2. The fruit solidifies enormously on cooling, so although it will be cooked when the berries have burst, it will still look runnier than you think cranberry sauce should.
  3. Give the sauce a final, whipping stir to help crush the berries into the liquid, and taste to check whether it needs more sugar; if you find it too sweet, just add some lemon juice. Transfer to a bowl to cool.
Recipe Notes

If you cook this sauce far in advance, it will jellify a lot so thrash it through with a fork before serving.
