I don’t know how about you, but I often catch myself forgetting that I have nothing for lunch for the following day. That is when I get saved by my pantry. All sorts of cans and grains that can easily be used in a simple lunch salad. One of my all time favourites is chickpeas. You can do so many amazing things with chickpeas, like hummus, but also an endless array of salads. Let me show you an easy and delicious recipe for a halloumi salad with chickpeas and bulgur.

I love halloumi in any dish, but it is especially delicious in this halloumi salad. The chickpeas and bulgur are so flavoursome and filling that you will realise that having a salad for lunch does not need to mean, or that you will not walk around hungry for half of the day. 

If you are a declared meat lover, try the salad by adding some grilled chicken breast, which you can marinade in lime juice, garlic, and smoked pepper – to go with the rest of the dish.

Instructions
  1. Cook the bulgur wheat following pack instructions. Meanwhile, in a non-stick pan, fry the halloumi in 2 tbsp oil for 3-4 mins on each side until golden and starting to crisp up.
  2. Mix together the lime zest and juice, paprika and remaining olive oil, and stir this through the bulgar wheat using a fork. Toss in the chickpeas and rocket, and serve with the fried halloumi slices.
