Instructions
  1. Cut the vegetables into rings/medium sized pieces
  2. Fry the potatoes and eggplants while keeping them a bit raw (half fry)
  3. Prepare the marinade by mixing the crushed garlic, the zest and juice of a lemon, ketchup, tomato paste, and all the spices.
  4. In the baking tray, spread the chopped onions, carrots, pepper, and potatoes.
  5. Marinate the chicken with the mix, the place on top of the potatoes.
  6. Place the diced eggplants between the chicken pieces.
  7. Bake until the chicken is golden at 190 degrees Celsius or 375 Fahrenheit. Keep checking the chicken every now and then, and massage the chicken with the marinade.
