Shish Barak packs an intriguing taste due to the flavours of the cooked yogurt, coriander, and garlic. If you are a fan of having intense flavour in your dishes, cooking this dish in plain goat yogurt is recommended. Goat yogurt helps to yields a much richer and intense flavour than cow’s yogurt. Nevertheless, either method still makes a great tasting dish.

The most time-consuming part of making Shish Barak is the stages of preparing the meat stuffing and rolling the dumplings. Therefore, to be more time efficient you can prepare several meals of dumplings in one go. You then split the dumplings and pack some in a zip lock bag to store in the freezer. When the time comes to make Shisha Barak, simply pull out a pack of dumpling from the freezer and prepare it as usual. However, only attempt this once you get more comfortable mastering this recipe.

Although it is common to cook the dumplings in the yogurt sauce, there is an alternative method. If you would like to preserve the crunchiness of the shisha Barak, it is best to serve it with vermicelli rice. To do this, place the Shish Barak dumplings in a serving dish then pour the yogurt sauce into another deep dish. When serving each individual plate, place a serving of rice and Shish Barak dumplings and cover with yogurt sauce.

Instructions
  1. To make the dough, place the flour in a bowl and make a hole in the middle. Add salt and water to the hole then use a fork to beat the flour into a dough. Once the dough thickens, use your hands to knead the dough. Knead the dough on a smooth surface until it is very smooth and elastic. Cover with a towel or plastic wrap and leave to rest for 30 minutes
  2. To prepare the filling: Add the vegetable oil to a frying pan on high heat. Once the pan and oil are hot, add your chopped onion and pine then cook until the onions are brown. Add the ground meat, cinnamon, pepper, salt and seven spice then fry until the meat turns brown. Leave aside for it to cool.
  3. Preheat the oven to 180 degrees Celsius.
  4. To make the shish barak dumplings: on a lightly floured surface, roll the dough using a rolling pin. Cut the dough into 4 cm circles.
  5. Place 1 teaspoon of filling at the centre of each circle and fold in half. Press edges together then bring both corners together to obtain a dumpling. Make sure that the edges are well sealed.
  6. Put all the meat dumplings in a well-greased baking tray and bake for 10 min or until blushed. Remove from oven and set aside.
  7. To prepare the sauce: strain the yogurt into a pot, add the dissolved starch and place over medium heat. Stir continuously in a circular movement until yogurt thickens then reduce the heat. Add the Shish Barak and stir every 2 minutes so the yoghurt does not stick to the pot.
  8. In a small skillet, add tablespoon of vegetable oil and 50g of butter. Fry the crushed garlic and fresh coriander with the vegetable oil and add them to the yogurt.
  9. Add salt and black pepper to the mixture then Mix well and turn off the heat.
  10. To serve, pour the yogurt and Shish Barak dumplings into a deep serving dish then enjoy!
