Our take on a vegetarian lasagna recipe is easy to prepare and delicious to eat!  It is a twist on one of the staple meals of Italian cuisine.  Lasagna is a traditional food that has been around Italy dating back to the Middle Ages, and it has many variations.  Original lasagna has it roots in Naples.

Vegetarian Lasagna Recipe

Start with medium heat.  In a saucepan add the olive oil and fry the carrots, onions, and celery until they start to get soft, about 8 minutes.

Increase the heat to high and add the zucchini, cooking for a few minutes until it starts to get a nice color without being too soft.

Add the spinach and bring it to boil.

Season to taste and remove from the heat.

Time to assemble!

Using a 24 cm long glass tray.

Spread a little of the tomato sauce at the bottom of the tray to prevent it sticking.

Layer the lasagna sheet noodles.

Spread one third of the ricotta cheese evenly.

Now spread one quarter of the tomato sauce mixture on top.

Spread 50g of the mozzarela on top.

Repeat the process another 2 times.

Add a final layer of lasagna noodles on top.

Add the remaining tomato sauce, mozzarella and Parmesan.

Bake in the oven for approximately 20 minutes at 180 C or until the lasagna is cooked and has a golden brown top.
