I bet you have heard of French onion soup, this dish is somewhat a spin-off of that classic. Whatever the origin of the French onion chicken may be, the sure thing is that it is delicious! If you are a super lazy chef, or you are just not feeling very active at the moment you can throw all the ingredients into a slow cooker without first browning them in a pan. It will change the dish slightly but it is an option. It all depends on you since you’re the head chef in your own kitchen. That is one of the reasons why I love cooking. Instructions
  1. Melt the butter in a pan and fry the onions and garlic. When they get golden, transfer them to the slow cooker. Add olive oil to the pan and fry the chicken until it gets nicely browned on both sides. Transfer the chicken to the slow cooker and add salt and pepper to flavor.
  2. In a bowl mix the broth, mustard, balsamic vinegar and pour into slow cooker. Add the rosemary and thyme. And cook on a high setting for 3 hours.
  3. When cooked, transfer to an oven heatproof dish. Drain some of the juices from cooking if there is too much. Place the cheese on the top and grill for 10 minutes in the oven. Serve with the parsley sprinkled on top and mixed salad with vinaigrette.
