Italian Mushroom Risotto Recipe

Today’s Italian Mushroom Risotto Recipe is classic Italian.  Risotto is a traditional rice dish from Northern Italy. The rice is cooked in a broth, it is rich, creamy and buttery.

Mushroom Risotto Recipe

Italian Mushroom Risotto Recipe

First of all prepare the mushroom stock

Boil the water and pour over the dried mushrooms. Leave for 15 minutes

Strain the liquid, removing the dried mushrooms and keeping the liquid separate

Finely chop the dried mushrooms and reserve

Heat a frying pan over a high heat

Add half of the olive oil and saute the sliced mushroom for about 5 minutes

Remove from heat and reserve

Heat a large sauce pan with the remaining olive oil

Add the onion and cook for 5 minutes on low heat, stir from time to time

Add the garlic and cook for 3 minutes, stir from time to time

Turn the heat to medium and add the rice, stirring often

Add the white wine and cook until the equivalent of a table spoon is left, stirring often

Add half of the mushroom stock

Continue to stir and cook the risotto

Add the sliced and fine diced mushrooms

Continue to add the mushroom stock as needed

Add a tea spoon of salt

It will need to cook for approximately 25-30 minutes over a medium heat

When the rice is cooked, but still all dente, add the mascarpone, stirring well

The rice should be rich and creamy

Finally add the parmesan and butter cubes and stir

Adjust the seasoning to your taste

Ready to serve. Enjoy!
