Kibbeh is a traditional dish of the Levant region of the Middle East spanning Syria, Lebanon, and Jordan. The brilliance of Kibbeh has propelled the recipe to various parts of the globe. A very special version of the dish exists in Brazil where they use a cheese stuffing for the middle layer which sounds very tasty!

This dish does require a bit of time and patience especially when it comes to the layering and sautee process. If you want to time efficient, carry out some of the stages beforehand. For instance, you can soak the Burghul in water overnight and drain it well the following day. To be extremely time efficient, you can make the whole ground beef filling layer the night before. Then when you are ready to eat simple assemble and bake.

Tips

The secret to preparing the finest Kibbeh Bill Suniye is to use a good food processor, very fine mined meat and lots of onions. To ensure you have the finest minced meat, ask your butchers to run the ground beef four or fives times in the grinder. Onions are an essential part of this dish as it provides the sweetness. Additionally, keep a careful eye on your pine nuts as they toast. Your pine nuts can add a bitter taste to the dish if they get burnt.

You can use your hands if you prefer not to run your meat through the food processor. To form the Kibbeh part, simply mix the onion, bulgur, and meat into a cohesive mix using your hands. The only issue is that this method requires a lot more effort and you may not get the right uniformed mixture.

Once complete, a natural Yoghurt cucumber dip goes really well with this dish.

Instructions
  1. Preheat oven to 180 celcius degrees (350 Farenheits)
  2. Soak Burghul in warm water for 30 minutes then drain
  3. Toast pine nuts in a dry pan over medium heat until golden brown and reserve on side
  4. Heat Olive oil in a large non-stick pan
  5. chop 1/2 of the large white onion and add it to the pan. Cook for 3 minutes
  6. Add in Garlic and saute for 30 seconds
  7. Add I'm cumin, cinnamon, 1/2 teaspoon Kosher salt and hot paprika to the pan and cook for one minute
  8. Add in ground beef and cook until browned
  9. Add in parsley and toasted pine nuts
  10. Combine one large chopped onion to a large food process and blend for 4 pulses
  11. Add in salt and Burghal and pulse for 3-4 more pulses
  12. Add in 900g of 100% lean ground beef and process for four minutes or until fully combined, scraping down the bits that may stick to the sides
  13. In a baking dish, butter the edges so the ingredients doe snot stick to the dish
  14. Add in half of the Burghul and beef mixture and flatten
  15. Add the cooked ground beef layer then add the other half of the burghul and beef mixture and flatten
  16. Sprinkle with some salt and freshly ground black pepper
  17. Bake in the oven for 25 minutes
  18. Take out of oven and score into a diamond shape design then continue to bake for another 25 minutes or until browned and fully cooked
  19. Let it set for 5 Minutes before serving
