Now let’s talk about this delightful & healthy dish. Contrary to what most people think, it’s really simple to make if you just follow the instructions in this recipe. 

It is served while still hot & usually garnished with dried mint like shown in the picture above. You can have Koussa & Laban for both lunch & dinner. It can also be reheated & eaten the next day which makes it perfect for a lunch box meal! 

Keep in mind that, like any other classical Lebanese dish, you can adjust Koussa & Laban to fit your taste-buds. You can always replace the beef with lamb meat & adjust the spices according to your liking.

Instructions
  1. Trim the top shell of the zucchinis & place them in a bowl full of water. With a vegetable corer, take off the core of the zucchinis leaving about 7 mm of the shell.
  2. Now let's move to the stuffing: Mix the onions, the vegetable oil, the rice & the spices with the minced beef. Once the combine is ready, stuff it in the zucchini & place in a saucepan. Note: If feasible, place the zucchinis vertically so that the stuffing doesn't spill
  3. Now, dissolve the corn starch in the water. Add the yogurt to the paste, along with the garlic cloves & the dried mint. Stir them well & pour them in the saucepan on top of the stuffed zucchinis.
  4. All you need to do now is cook the combine over medium heat until the sauce boils. Afterwards, decrease the heat to make it low & cook for about an hour. Make sure the rice is well cooked!
