Thanksgiving leftover turkey casserole is very forgiving. All you need to do is take all the leftover from Thanksgiving, layer them in a casserole dish and pop them in the oven for about an hour and you have a whole new dish to enjoy. It is as easy as pie only, in this case, we won’t be making any pies.

However, if you find that you have some other ingredient’s in the fridge that didn’t get the chance to make it to the Thanksgiving table they too can be included. Alongside food which simply has not been used and is running down in use by date. With a leftover turkey casserole, you have the opportunity to experiment with ingredients you never thought would work together.   1. First of all, spray a square casserole dish with cooking spray. Make sure to cover each corner of the dish.
  1. Cut 6 slices of whole wheat bread into one-inch cubes then place half of the bread cubes at the bottom of your casserole dish.
  2. In a separate bowl, combine your leftover turkey, the diced onions, then your diced celery stalk. Add the light mayo and 1 teaspoon of black pepper then mix the ingredients together.
  3. Spread this mix over the bread cubes inside the casserole dish. Then add the remaining bread cubes on top of the mixture.
  4. Whisk together two eggs in a small bowl and add 350 ml of skimmed milk to the whisked eggs. Pour this mix over the ingredients inside the casserole dish.
  5. Cover the casserole dish with aluminium foil and place it in the fridge to marinate overnight.

  1. Preheat your oven to 160 degrees then take out your marinated casserole from the fridge.
  2. Add 1 can of cream mushroom soup on top of the marinated casserole.
  3. Butter and cut the 2 remaining slices of bread into one-inch square cube and place on top of the casserole dish.
  4. Now the casserole dish is ready to go inside the oven for 60 minutes.
  5. After it is done cooking, sprinkle some grated mozzarella cheese over the top of casserole. leave the dish to stand for 15 minutes so that the cheese can melt.
