Malfouf is a traditional Lebanese dish which involves rolling cabbage leaves with a stuffing of ground meat, rice, and spices. They are then stacking in a cooking pot in layers with garlic in between them. You then cook them on low heat in a tomato sauce. However, the recipe we bring you today involves baking the stuffed cabbage as opposed to cooking them. Nevertheless, each method yields a great tasting Mehsheh Malouf.

The key to success when making this recipe is to ensure that the cabbage leaves are tender. In addition, it is important that you use medium grain rice. Medium grain rice cooks more easily so it removes the likelihood of eating uncooked rice. Lastly, be generous when adding your seasoning. It is better to add more seasoning than less to ensure that the spices permeate the dish.  This will prevent the dish from tasting plain. Flavour is key.

This dish is also suitable for vegetarians and vegans. Simply replace the meat and rice combo with grain bulgur and split chickpeas for a greener version of this dish.

Instructions
  1. Cut the core of a big cabbage from the top. Then cook the whole head of the cabbage in boiling water for a few minutes with the lid on .After a few minutes, the cabbage leaves will come off very easily.
  2. Take out the soft leaves and set them aside to cool down
  3. Once cooled, cut the thick stem part of the leaves then try to roll one or two of them to see if they are soft enough. If not, and if they tear or break, put them back in the boiling water pot and cook them for another 5 minutes.
  4. In a large bowl mix well together, the ground beef, rice, dill, parsley, chopped onions, chopped garlic, black pepper, salt, hot red pepper and add ¼ of oil
  5. On a flat surface cut the cabbage leaves into equal parts.
  6. Put 2 Tbsp. of the filling in each leave and roll up. Starting from the wide side and ending up toward the stem side of the leave.
  7. Arrange the cabbage rolls in a big baking dish. Make sure the steam side is down.
  8. To make the tomato sauce, in a bowl add slices of garlic, ¼ tsp of black pepper, 1 tsp salt, 2tbsp oil, 2 tomato sauce cans and 3 cups of water.
  9. Pour the sauce over the arranged cabbaged rolls in the baking dish.
  10. Pre heat your oven at 180 degrees Celsius
  11. Cover the baking dish tightly with aluminium foil then bake in the pre heated oven for 1hr 30 mins.
  12. Serve and enjoy on it owns or with yogurt mixed with dry fresh mint or dill.
