For me, this is always something that I look into since during the week I simply do not have time to cook. If you want to make this dish extremely spicy, chop some green chillies and do not take the seeds out. The flavours in this dish really come together with the extra spiciness.

But if you are not a fan of chillies – that’s ok as well. Possibly some advice for you to make this a little milder is to cut the chillies out – you’ll still enjoy the dish equally because the other flavours combine to make something amazing. If you do cut out the chillies, do not go overboard with the amount of corn in the dish! This is important because there will be nothing spicy to balance out the sweetness of the corn.

Instructions
  1. Bring chicken broth to a boil in a medium saucepan. Stir in rice, cover, and simmer for 15 minutes.
  2. Add chorizo to a large nonstick pan over medium heat. Once partially cooked, add onion and garlic and continue to cook until chorizo is cooked through and onion is soft.

  3. Add tomatoes and corn to the chorizo and let simmer for about 5 minutes to cook off some of the liquid.
Recipe Notes

The chorizo rice is delicious when served with guacamole. 

How to make homemade guacamole?

You will need:

  • 1  ripe avocado
  • 1 tbsp chopped cilantro
  • 1/4 chopped red onion
  • lime juice from 1/4 lime
  • salt and pepper
  • smoked paprika - 1/4 tsp 
  • cumin - 1/4 tsp 

Smash the avocado and mix in the rest of the ingredients. Serve chilled. Simple.
