If you’re Lebanese, then you definitely know a relative or friend living abroad who packs frozen mloukhiyeh in their suitcase! There’s nothing better than this meal to give you a homey taste… right? Contrary to common belief, this meal is very easy to prepare once you get the hang of it. All you need to do is follow the steps below and you’ll be good to go!

Now, let’s give you some insight on these olitorius corchorus leaves. You can get them in frozen packages, or fresh from the market during summer. If you prefer the fresh mloukhiyeh leaves, you’ll need to wash them and place them on a towel to dry. After that, you’ll need to cut off the stems and use only the green leaves which happen to be full of vitamins. 
You can also freeze the mloukhiyeh leaves so that this hearty meal can warm you up during winter.

Instructions
  1. First, place the garlic cloves along with the coriander in a casserole and cook them on low heat for about 2 minutes. After that, add the mloukhiyeh and cover the whole thing with water. This is where you add the lime juice and the salt. Cook this combination for 30 minutes.
  2. In the meantime, you can start by cleaning up the chicken. When the chicken is all cleaned up, you can place it in another casserole and fill it up with water. Add the bay leaves, the cinnamon stick, some salt and black pepper and let the whole mix boil for 30 minutes.
  3. That being done, it's time to cook the rice. You're gonna need a third casserole: pour 2 tablespoons of olive oil, and cook the rice on low heat for about 2 minutes. After that, add the water and some salt and let it cook until all the water is drained. (It should take about 20-25 minutes)
  4. As for the dressing, all you need to do is chop the onion very finely and add it to the vinegar. Keep in mind that the sauce is very strong and you should only add about 2 tablespoons of it in your plate.
  5. Now the most important part of this dish is combining the layers. There are many ways that you can go about it, but we advise the following: At the bottom of the plate, add the bread crumbs, and pour the rice on top. After that, put some of the flavorful mloukhiyeh, followed by the chicken and you can finally add the vinegar sauce.
