Moroccan Spiced Mince With Couscous Recipe

If you have some minced beef in your fridge and you’re not really sure what to make, try this awesome Moroccan spiced mince. It’ll definitely excite you more than the classic (old and boring!) bolognese. This dish is your standard one-pot dish. You can simply mix all the ingredients together and make a balanced meal that consists of meat, veggies, and grains.

I am a fan of the sweet and savoury combo, that is why I really like Moroccan cuisine. I think the spices and the sweet addition of apricots make this dish unique, following one of the signature Moroccan flavours. You can use lean beef in this dish to make it more nutritious and balanced. Additionally, this dish can also be great as a veggie only meal. So if you don’t eat meat at all, or Thursday is your ‘veggie day’ like me, then you can make some substitutes. Swap the chicken broth with a veggie one, and the mince with sweet potatoes or lentils and, bingo! Top notch veggie nosh. 

If you like your diet to be full of greens, serve this Moroccan spiced mince with a mixed green salad with vinaigrette on the side. It is one of my favourite sides because it simply goes well with everything. You can also serve it with mint yogurt sauce on the side.

Instructions
  1. In a skillet, heat oil over medium heat until hot. Add carrots, onion, paprika, allspice, and cinnamon, and cook for 10 minutes or until vegetables are tender.
  2. Increase heat to medium-high and stir in ground beef and cook for about 5 minutes or until meat is no longer pink, breaking up meat with side of spoon. Stir in beans, apricots, parsley, salt, and 1/2 cup broth. Simmer, uncovered, for 10 minutes or until mixture thickens slightly.
  3. Meanwhile, prepare couscous as label directs, but substitute remaining 1 1/4 cups broth for some of the water called for to prepare couscous.
  4. Fluff couscous with a fork. Spoon couscous onto 4 dinner plates or bowls. Top with beef mixture.
