Rosemary and Cherry Tomato Foccacia Recipe

Foccacia is an oven baked flat bread from Liguria, very popular throughout Italy.  There are different variations of toppings that can be added. Today’s Rosemary and Cherry Tomato Foccacia Recipe is one of my favorites.  The dough is similar to a pizza and can therefore be used as a foccacia pizza base as well.

It is also a great bread for sandwiches which makes it extremely versatile.

Rosemary and Cherry Tomato Foccacia Recipe

The first step is to make the starter.

Add all the ingredients for the starter in a mixing bowl.

Mix it well, transfer to a plastic container, cover well and leave it over night.

Now to make the foccacia.

Using a mixer with a dough hook.

Add the flour, the dried yeast, the fine salt and the starter from the previous day.

Let the mix work the dough for 8 minutes or until the dough fills elastic.

Using a tray of 265x325cm (or similar size).

Add 50ml of the extra virgin olive oil at the bottom and spread all over the tray.

Let it rest at room temperature for 2 hours.

Pre-heat the oven to 180 C.

Using your fingers dimple the dough.

Spread the rosemary and the cherry tomatoes halves over the top.

Bake in the oven for 50 minutes or until the foccacia is fully cooked.

Remove from the oven.

Brush the top with the remaining olive oil.

Sprinkle with maldon sea salt.

Let it cool down before portioning.
