Funny thing is that as a kid I hated cods. It was one of few foods that I simply could not force myself to eat. It was so bad that I would refuse to participate in lunches that included cods and go hungry for the whole day. Looking back on that period I am not sure how it was possible. Maybe I was simply too stubborn to give it a fair go.  Now cod is one of the most regular ingredients in my casual, everyday cooking.

If you yourself yet have to see how tasty this particular fish can be or you’re trying to convince someone else, try this recipe. A delicious combination of zucchini, tomatoes and red pesto makes it extremely approachable. Even for the ones who are not that fond of eating any form of seafood.

A great thing about this recipe is that it is a one stop meal. Instructions
  1. Boil the brown rice; place the rice on a big sheet of baking paper in a square- so it matches the size of the fish fillet.
  2. Season the fish according to your taste and sprinkle thyme on it
  3. Place it on top of the rice

  4. Spread pesto on top of the fish and place sliced tomatoes and sliced zucchinis on top of the pesto so that it covers the fish.
  5. When finished spray with olive oil and season with salt and pepper place basil leaves on top.

  6. Wrap the paper around the dish so it makes a closed package and place on a baking tray.
  7. Bake for 20 min at 200 C.
