Recipe For Stuffed Artichokes With Minced Meat and Pine Nuts

Start by cleaning the artichokes if using fresh

Pre-heat the oven to 200C

Add a little olive oil to a frying pan over medium heat

Fry the artichokes on both sides (stem and open side) until golden brown and reserve

In a large sauce pan add the chicken broth, lemon juice and season to taste

Bring the artichokes to a boil and simmer for 50 minutes (if using fresh) or 15 minutes if using frozen

Once cooked remove from the cooking liquid and set aside

While the artichokes are cooking, prepare the mince

In a medium sauce pan over a medium heat add some olive oil

Cook the onions for 3-5 minutes until they become translucent

Add the mince and the dry spices

Cook until the there is no pink or red mince left and season to taste

Add the almonds and pine nuts

Remove from the heat and add the lemon zest and chopped parsley

Mix well and taste to make sure there is enough seasoning

Use the mince to stuff the artichokes

Be generous and stuff them fully so they overflow

Once stuffed, put them on a tray and bake 15-20 minutes covered with foil

Remove from the oven and they are ready to serve
