This stew is very easy to make and can be prepared even if you are a beginner in the kitchen. Because the main ingredient is chickpeas the cooking time is very short – especially when you use canned chickpeas instead of cooking it yourself. That combined with tomatoes and spinach make a delicious stew. 

There are so many recipes out there for chickpea stews as they are one of the preferred substitutes for meat. One reason is the taste but the more powerful cause is that chickpea is rich in protein and hence balance the lack of meat in the diet. You can prepare this ingredient in many ways, but you should definitely try it in this version of Spanish chickpea and spinach stew.

Instructions
  1. Heat up the oil in a large frying pan and add chopped onion. Fry on a low heat until cooked. Add chopped garlic and cook for a minute longer stirring
  2. Add all the spices and tomato paste to the pan and stir it into the onion and garlic mixture. Cook for a minute and add the canned tomatoes. Simmer on low heat for 5 minutes
  3. Stir in the chickpeas and let them warm through. Now add in the spinach and cook for 5 minutes.
