One of the more popular types of the classic Paella is made with chicken and chorizo sausage. It can be a great choice if you are not a fan of seafood. Even though it is not the’original’, it is a delicious dish and you will see it is worth your while. You need around 1,5 hour to get this dish ready. This Spanish rice needs only a few minutes prep and after that, it just cooks for a while.

This Spanish rice is so delicious because of the chorizo in it. That and the lemon zest gives it a unique flavor. That is why it is important to make sure that the chorizo that you buy is good quality. I have had different experiences, so if you can try to get one that is sold in a speciality gourmet shop as some of the supermarket offers can be disappointing.

Chicken chorizo rice
Instructions
  1. Peel and finely chop the onion, peel and finely grate the garlic and de-seed and roughly chop the pepper. Pick the parsley leaves and put aside, then finely chop the stalks. Roughly chop the chorizo.
  2. Heat 1 tablespoon of oil in a casserole pan on a medium heat. Once hot, add the onion, garlic, pepper, parsley stalks, chorizo and paprika for cook for around 5 minutes, or until starting to soften, stirring regularly.
  3. Add the rice, then stir everything around until the rice is coated in all the lovely flavoured oil. Pour in the passata and stock, then add the zest and juice of 1/2 lemon.
  4. Simmer for about 1 hour. Keep checking whether the rice is cooked. Add extra broth if needed.
  5. Finely chop the parsley leaves, then sprinkle over the top. Cut the remaining lemon into wedges for squeezing over. Delicious served with a crisp green salad.
