This Traditional Spanish Tortilla Recipe makes for a great snack. It is very simple and delicious and a great way to impress.

Also known as a Spanish omelette in English speaking countries.

The first references to Tortillas date back to around 1817.

With several variations, today’s recipe has onions, which makes it my favorite.

You can also flavor your tortilla with a variety of other ingredients.

Spinach, feta, and piquillo peppers are just some of the ingredients you can use to tweak this recipe.

Traditional Spanish Tortilla Recipe

Start by heating the oil in a deep pan

Add the sliced onions

Let it fry for about 5-8 minutes over medium heat

Add the sliced potatoes

Season the oil with salt to taste

Cook over medium heat for 8-10 minutes or until the potatoes are tender

Remove from the heat

Using a colander over a deep bowl, drain the potatoes

Keep the oil it can be used again

In the mean time add the eggs to a bowl and beat them well

Taste the potato and onion mix

Adjust the seasoning by adding salt to the eggs

Mix the potatoes and onions into the egg bowl

Heat a 24cm non stick frying pan with a little olive oil

Over a medium heat, add the egg and potato mixture

Cook for about 5 minutes or until golden brown at the botton

To flip the tortilla, cover the frying pan with a large plate

Hold the plate with your hand pressing against the frying pan

Flip it over

Return the tortilla back to the pan

Cook for a further 5 minutes or until golden brown

The tortilla should still be slightly runny in the middle

If you need to cook for longer you can return to the pan or finish in the oven

Once cooked, let it cool down before serving

Tortillas can be eaten hot or cold
