A classic Turkish chicken shish is a great meal to prepare for a bbq but also just to enjoy at home for dinner or lunch.  It is easy to make and takes almost no time to prepare. I think the key to the authenticity of this dish lies in the grilling, more than in marinade or the meat.

When you grill your chicken shish make sure that you have very high heat. It is best to do it on an actual grill rather than in the oven, but sometimes we don’t have the luxury of choice. If you have had a good luck and you have a grill at your disposal make sure that the fire is quite strong. You want the meat to be really crispy and quite brown, so do not be shy to leave it there for a bit longer. Because the heat is higher the outside will get more well done but the meat will remain tender and won’t get dry.

If you are a fan of kebabs, you can eat this delicious Turkish chicken shish with a pita bread and some fresh chopped tomatoes, cucumber, lettuce and onions. Prepare a garlic yogurt sauce, to finish off this kebab. It is very tasty but also a quite healthy version of this dish.

  1. Heat oven or charcoal grill. Mix the olive oil with spices and salt and pepper and marinade the chicken and veggies for 30 minutes.
  2. Put the meat and veggies on the skewers and grill 15 minutes turning the meat.
  3. Serve streight from grill with salad and pita breads.
