This vegan rice noodle salad is quick and simple to make. Perfect for making the night before and storing it in containers to have as a quick meal. The best thing about it is that it can be enjoyed hot or cold! This is what makes it the perfect meal to make when meal prepping for your week. As a little secret, you should have it cold the next day because that is when it tastes best. After a day or so, the ingredients get to mix in together creating a fusion of flavour that is absolutely to die for.

To add an extra crunch, you can lightly toast your sesame seeds and use it for garnish at the end. This will improve the presentation but also add an extra crunchy surprise. In addition, to be extra healthy and strict on your diet, you can use low sodium soy sauce. This will reduce your salt intake, however, it will not take away any bit of its flavor

Instructions
  1. Fill a large pot with lightly salted water and bring to boil and take off the heat. Add the rice noodles and soak. Drain well in a colander and set in the sink
  2. In a large bowl together the sesame oil, soy sauce, balsamic vinegar, Chilli oil and sugar
  3. Toss in the cooked noodles and mix well with the dressing to get the noodles fully coated
  4. Add in your chopped green onions, diced peppers and shredded carrots. Then mix it well with the noodles and the dressing so that it is all fully coated.
  5. Serve warm or refrigerate to have it as a cold salad.
