Strawberry Nutella Galette

Are you that “kind of” pie person? You know, the one that likes the idea of pie, but not particularly a fan of the crust to filling ratio? We have the perfect solution for you!

Galettes are rustic, free form pastries that can be made with an infinite number of fillings–savory or sweet! Similar to a pie, but with much less filling, galettes have the perfect flaky crust to filling ratio. Pairing perfectly with almost any beverage, galettes are simple enough to make and are sure to impress your guests on any occasion! Recommended for breakfast, lunch, dinner and everything in between.

Simple Strawberry Nutella Galette

For the dough
  1. 1 cup (125 grams) unbleached all-purpose flour
  2. 1/2 teaspoon (2 grams) sugar
  3. 1/8 teaspoon salt
  4. 6 tablespoons (3/4 stick or 85 grams) unsalted butter, just softened, cut in 1/2-inch pieces
  5. 3 1/2 tablespoons (50 ml) ice water
For the crust
  1. 1 egg
  2. splash of orange liqueur
  3. sugar
For the filling
  1. Nutella
  2. 1 lb (16 oz) fresh strawberries, hulled and halved or sliced
  3. 2 1/2 tbsp sugar (optional)
Making the dough
  1. Mix flour, sugar, and salt in a large bowl; add 2 tablespoons of the butter.
  2. Mix until dough resembles coarse cornmeal. (You can use a mixer or pulse in a blender a few times)
  3. Add remaining butter; mix until biggest pieces look like large peas.
  4. Sprinkle ice water over the flour mixture 1-2 tablespoons at a time and stir with a butter knife to distribute.
  5. Mix the mixture with your hands until it starts to come together in a coarse ball. Sprinkle the dry bits with more water and bring together into a ball.
  6. Flatten ball into disc shape and wrap in plastic wrap.
  7. Refrigerate for at least one hour.
For the filling
  1. Halve/slice strawberries.
Assembling the galette
  1. Preheat oven to 400°F (204°C).
  2. On a lightly floured surface, roll into a 14-inch circle about 1/8 inch thick.
  3. Place dough on a parchment-lined baking sheet.
  4. Spread a thin (or thick? 🙂 ) layer of Nutella on the dough up to about 2 inches from the edge.
  5. Spread strawberries evenly on top of Nutella.
  6. Gently fold up the crust over part of the strawberries in an overlapping fashion; crimp the edges.
  7. Beat egg and add a dash of orange liqueur (like Grand Marnier).
  8. Use a pastry brush to apply egg wash to the crust. Then, sprinkle with sugar.
  9. Bake until crust is golden brown, 30-45 minutes, rotating galette every 15 minutes.
For filling
  1. It's optional to toss the fruit in sugar. Since this recipe calls for Nutella, you can decide if you want your galette to be on the sweeter side, or have a sweet and tart aspect to it. Either way, it's delicious!
  2. Some recipes call for a thickener (depending on the fruit), such as cornstarch. I've made galettes with and without a thickener and have found that with the strawberries and Nutella, a thickener is not essential.
