First on our list of summer dessert recipes is a Berry Trifle. Trifle is a classic dessert but once you give it a go in the kitchen you will also realize that it is extremely easy to make. You simply layer up the ingredients and voila the delicious dessert is ready. What is even more fun is that this is one of the very “flexible” dishes that you can adjust to your preference. Choose your favorite berries and save 30 minutes for the prep. Do not forget that it should chill in the fridge before being served!

Melon Popsicles

Watermelon

I think Watermelon is a perfect summer fruit. It is so juicy that it will hydrate you and it has a perfect refreshing taste. I love making a watermelon smoothie in the summer with some extra mint and lime juice. If you want to go one step further make a popsicle out of it!

Ingredients
  1. Small Watermelon
  2. Mint - handfull
  3. Juice fro 1 Lime
Instructions
  1. Cut the watermelon into cubes and place them into a blender.
  2. Add the mint and lime juice to the blender as well and blend until the juice is all smooth.
  3. Pour the watermelon mix into a popsicle forms and leave to freeze for a few hours.
  4. Enjoy!
Notes
  1. If you have a big watermelon you may have to blend a few batches separately, it will aslo make many more popsicles. You can belnd it with the seeds or without, depending on the fruit you have and your preferance.

Pavlova is a staple summer dessert. The meringue is a great texture and even though it can be quite a sweet dessert there are great ways to balance the sugary base with some sour fruit on top. Berries are the classic choice, but you can also try a few other alternatives like pomegranate seeds, gooseberry or if you are curious and want to explore some new flavors try quince compote. A classic dessert that you can probably make in 100 different ways. I would personally recommend a Polish version of a cheesecake. It is slightly different from what you are probably used to as it uses a different type of cheese. Instead of cream cheese, it uses finely mild white cheese (twaróg). If you have any Polish or Eastern European shops around you they will surely stock it, but you can also easily make it yourself. Make the traditional Cheesecake first and then add the fresh strawberries on the top for the summer accent.
