How to Make Salted Caramel Ice Cream Cake! Recipe.

Here we go again. Are you ready? Salted caramel ice cream cake recipe or Salted caramel brownie ice cream cake recipe. Yes, it’s real. Although it sounds complicated, this recipe is actually quite easy to make. And it is the best thing to have around on those hot summer days. Whether for a barbeque or for a birthday party, this recipe will wow your guests.

This recipe was shared with us by a family member. They created this devilish dessert for a summer barbeque and it was a complete hit. So we just had to steal the recipe and share it with all of you. And as always we will share some shortcuts for the lazy –time constrained- people out there.

We’re starting off with a brownie layer.  If you feel like you need to use a boxed brownie mix because frankly it tastes better then go ahead. we won’t tell. But we prefer making our own brownies. And I’m sharing the recipe.

Brownie+Ice cream+Nutella

You will need to use a springform pan to be able to serve it to your guests. So make sure to bake the brownie mixture in the pan. After removing the brownies from the oven, leave them to cool for at least two hours before adding the ice cream layer.

And here is the trick to making it taste better. Add a layer of Nutella between the ice cream and the brownie layers. Because you can never go wrong with Nutella. It works with absolutely everything.

You can use any ice cream flavour but plain and simple vanilla works just fine if not better. If you like crunchy textures you can add some crumbled pieces of Oreos. We decorated our cake with Oreo pieces.

And now for the layer that will bring our cake together and take it from an everyday dessert to a taste bud party: The salted Caramel sauce.

You start off with sugar and water over medium heat while stirring constantly until the sugar has fully dissolved . Leave it without stirring until it boils and turns into a dark brown color. You want to make sure that the sugar doesn’t burn. Next, remove it from the heat and whisk in the heavy cream. Be careful as the mixture will bubble vigorously. Add in the butter, the vanilla and the salt. And then leave it to cool. This is the same recipe that I have previously used for the Twix pie, read it here. The cool thing about this recipe is that you can alter the amount of the salt to your preference.

Leave it to cool and then pour it onto the ice cream cake. Keep the cake in the freezer. Enjoy!

For the Brownie
  1. 4 ounces (113 g) unsweetened chocolate
  2. 1 cup (230 g) unsalted butter
  3. 4 eggs
  4. 2 cups (766 g) sugar
  5. 1 teaspoon vanilla extract
  6. 1 cup (90 g) all-purpose flour
For the Ice cream layer
  1. 1 1/2 Pint of Vanilla Ice cream
  2. 1 cup of Nutella
For the Caramel Sauce
  1. ¼ cup (58 mL) water
  2. 1 cup (192 g) granulated sugar
  3. ⅔ cup (158 mL) heavy cream
  4. 3 tablespoons unsalted butter
  5. 1 teaspoon vanilla
  6. 1 teaspoon salt (or to taste)
For the Brownie
  1. Preheat oven to 350 degrees F (177 C).
  2. Melt the chocolate and butter
  3. Add the eggs, sugar, and vanilla and mix well with a spatula.
  4. Add the flour and stir to combine.
  5. Spread the batter evenly in the prepared pan.
  6. Bake for 25 minutes.
For the Caramel Sauce
  1. Heat the water and sugar over medium heat.
  2. Stir constantly until the sugar has dissolved and the mixture is bubbling.
  3. Increase the heat to high and bring to a boil, do not stir
  4. Let the mixture continue boiling until it turns an amber color
  5. Remove from the heat and slowly whisk in the heavy cream, the mixture will bubble vigorously
  6. Add the butter and stir well until the butter has melted completely.
  7. Add in the vanilla and salt, and stir until fully combined.
  8. Pour the caramel sauce into a dish and allow to cool completely.
