The Ultimate Birthday Cake

Birthday celebrations are never complete without a cake and as a wise woman once said:

” A party without a cake is just a meeting”

This week, we bring to you the Ultimate Birthday Cake recipe.

The cake is a simple butter cake, you might remember that we used it in a previous recipe for the Triple Layer S’mores Cake. The recipe is easy to complete and to memorize. And just like we did with the s’mores cake, we are going to add some flavours to our simple cake before we bake it.

Since we will be decorating this cake with chocolate chip cookies, we will also add some to the cake. If you simply add the chocolate chips into the cake mix, they will sink to the bottom of the pan. We don’t want that obviously. So in order to avoid that, we will mix our chips in some flour just enough to coat them. This should prevent them from sinking to the bottom and spread out easily in our cake.

Next up is our frosting; I think that the best covering for this cake is a vanilla buttercream frosting. This is a Betty Crocker recipe. It’s quite simple and easy for beginners.

Mini Cupcakes as toppings

So you might be wondering what is so special about this cake, it’s definitely the toppings. First of all, you will need a mini cupcake pan. You will need to reserve some of the batter from the cake and use it to bake 4-5 mini cupcakes. Also, we will be using chocolate chip cookies for decorations and stuffing. For the chocolate chip cookies recipe, refer to my previous post about Top 10 Chocolate Chip Cookie Recipes and choose the one that suits you best.

So now that we have our baked goods all cooled down and ready, we will start assembling the cake. Begin by slicing the cake into two or three layers depending on your preference. Cover the first layer with the vanilla butter cream frosting and then crumble up some cookies and spread them over that first layer. And so on for the next layers. Then cover the whole cake with frosting. Add the mini cupcakes in a circular form around the top of the cake and frost them. Do not cover them entirely as you want it to show. Then carefully cut up the cookies into little triangle pieces and gently place them over the mini cupcakes.

The Ultimate Birthday Cake

For the Cake
  1. 1 C (230 g) of butter
  2. 2 C (192 g) of sugar
  3. 3 C (270 g) of flour
  4. 4 eggs
  5. 1 C (236 mL) of milk
  6. 1 tsp vanilla extract
  7. 2 tbsp of chocolate hazelnut spread
For the Vanilla Buttercream
  1. 3 cups (390 g) powdered sugar
  2. 1/3 cup (76 g)butter or margarine, softened
  3. 1 1/2 teaspoons vanilla
  4. 1 to 2 tablespoons milk
For the Cake
  1. Preheat oven to 350 degrees F (176 C).
  2. Cream the sugar and the butter.
  3. Slowly add in one egg at a time.
  4. Alternatively add the flour and the milk.
  5. Pour the batter into the prepared pan.
  6. Add the chocolate spread and swirl it.
  7. Pop it in the oven for 30 minutes.
For the Vanilla Buttercream
  1. In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed.
  2. Stir in vanilla and 1 tablespoon of the milk.
  3. Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar.
