Ingredients
  1. 1/4 cup soy sauce
  2. 3 Tbs. rice vinegar
  3. 3 garlic cloves, minced
  4. 2 Tbs. Asian red chili paste
  5. 2 Tbs. toasted sesame oil
  6. 1 tsp. grated orange zest
  7. 3/4 lb. firm tofu, cut into 1-inch cubes
  8. Vegetable oil for grill
Instructions
  1. Mix the soy sauce, vinegar garlic, chili paste, sesame oil and orange zest in a bowl that will fit the tofu later.
  2. Add the tofu to the bowl, and mix gently to coat. Then cover the bowl and leave in the fridge for 1 to 24 hours.
  3. Prepare a hot fire in a grill and oil the rack well. If using wooden skewers, soak them in water for 30 minutes.
  4. Put the tofu onto skewers, reserving the marinade.
  5. Place the skewers on the grill and cook, turning them once and pour the reserved marinade onto the tofu frequently, until browned on both sides, 4 to 6 minutes total.
  6. Serve immediately and enjoy!

Ingredients
  1. 4 Tbs Tamari
  2. 4 Tbs lemon juice
  3. salt, pepper
  4. 6 Tbs peanut butter
  5. 4 tsp red curry paste or tabasco
  6. 240 water
  7. 4 Tbs date or maple syrup
  8. pinch ginger (optional)
  9. 15 oz (400 g) tofu
  10. 6 medium sized ripe plantains or bananas
  11. 3 tbs coconut oil
  12. 2 mangoes
Instructions
  1. Add all the marinade/dipping sauce ingredients (Tamari, Lemon Juice, Pepper, Peanut butter, Curry paste, Water, Date or Maple Syrup, and Ginger) to a bowl, mix well, and refrigerate.
  2. Slice the tofu, mangoes,and plantains into cubes.
  3. Marinate the tofu for 20 mins in 4 tbs of the prepared marinade.
  4. Mix the plantain/banana cubes with coconut oil.
  5. Put the tofu, mangoes, and plantains on pre-soaked skewers.
  6. Place them on the grill while flipping very often

4. Zucchini and Feta Skewers

Your taste buds will be hit by amazing flavors even though this option is tofu free! These Feta & Zucchini Skewers will be absolutely refreshing on a hot day, and preparing these skewers is child’s play. We couldn’t ask for anything better on a lazy weekend! This recipe can also include more vegetables. Literally any of your grill-able favorites and cauliflower is definitely a recommended addition as well.

To serve 4 foodies, you’ll need 2 large zucchinis shaved into long strips, 4 skewers soaked in water for 20 minutes, and 1/4 cup of crumbled feta. Also, don’t forget the olive oil for drizzling, and salt and pepper to taste. And if you decide to add crunchy cauliflower to this recipe, you’ll need 1/2 a medium sized head cut into florets. Now, all you need to do is season the vegetables with a drizzle of olive oil, and salt and pepper to taste. Then, you put them on skewers and grill while flipping occasionally. Finally, after 10 minutes, the skewers will be ready to enjoy with your favorite side dishes!

Ingredients
  1. 2 small zucchinis (or one larger one)
  2. 8-12 white button mushrooms
  3. 2 tablespoons red miso paste
  4. 1 tablespoon brown rice syrup
  5. 2 tablespoons toasted sesame oil
  6. 1 1/2 tablespoons rice vinegar
  7. 1 clove garlic
  8. A teaspoon of toasted sesame seeds
  9. 1 spring onion, green and white parts
  10. Handful fresh basil leaves, chopped
Instructions
  1. Preheat the grill to medium heat.
  2. Place the sliced zucchini (into rounds) and the mushrooms in a bowl.
  3. Blend the miso, rice syrup, sesame oil, coconut oil, rice vinegar and garlic until smooth.
  4. Add to the vegetables bowl and mix.
  5. Put the vegetables on the skewers and set in the fridge until the grill heats up.
  6. Grill each side for 5-7 mins until they turn crispy brown.
  7. Serve with a sprinkle of basil, chopped spring onion and black sesame seeds.
