Summer Snack WIN: Watermelon Rice Krispies Treats

Watermelon is sweet, refreshing and epitomizes the essence of summer. Looking for a creative summertime snack? We have just the recipe for you: Watermelon Rice Krispies Treats!

Let’s be real, Rice Krispies treats are delicious any time of the year. With a little creativity, you can theme them for almost any occasion! For the summer, watermelon slices seem to be the go-to idea. The process is quite easy. You’ll need to make 2 smaller batches of treats rather than 1 batch as per usual, and add food coloring (we used gel coloring). The garnish? Mini chocolate chips!

For the rind
  1. 1 1/2 tbsp salted butter
  2. 2 c. miniature marshmallows
  3. Green food coloring
  4. 2 c. Rice Krispies cereal
For the center
  1. 2 tbsp salted butter
  2. 3 c. miniature marshmallows
  3. Pink or red food coloring
  4. 3 c. Rice Krispies cereal
  5. 2 tsp mini chocolate chips
Instructions
  1. Spray a 9-inch round cake pan with non-stick cooking spray, set aside.
For the rind portion
  1. Melt 1 1/2 tbsp butter in a medium non-stick saucepan over medium-low heat.
  2. Add in marshmallows and green food coloring and cook and stir just until marshmallows have melted.
  3. Remove from heat and in 2 cups Rice Krispies, stir until evenly coat.
  4. Pour into prepared baking dish and let cool just slightly (so it's not too hot to the touch), spray hands with non-stick cooking spray and spread and press mixture around outer edge to create a rind that is no more than 1-inch thick.
  5. Rinse and dry saucepan.
For the center portion
  1. Melt 2 tbsp butter in saucepan over medium-low heat.
  2. Add 3 cups marshmallows and pink or red food coloring and cook and stir just until fully melted. Remove from heat and stir in Rice Krispies.
  3. Pour into center of cake pan and once cool enough to handle spray hands with non-stick cooking spray and spread into an even layer.
  4. Let cool then sprinkle and press chocolate chips randomly over pink portion.
  5. Cut into 6 - 8 wedges. Store in an airtight container.
