How did the Chef learn how to cook and what is his story?

I cook from when I can remember, I started cooking with the age of 6 years and after 34 years I'm still cooking, but now I do professionally. I am and I have always been a self-taught, I believe that when you do something with passion, learning is something that brings pleasure and happiness. I started my career as a professional kitchen 22 years ago, in my home country Romania and the 25-year-old I moved to Spain. There I learned the Spanish kitchen and and afterwards I started the way in the modern kitchen. I like new challenges, so I studied on my own other cuisines, such as Nikkei cuisine, Arab cuisine among others. I believe that a good cook is not based only in recipes, must be organized, neat, clean, a good leader and especially a good person. The main ingredient in any recipe is love and to have love, you have to be a good person. My cuisine is based on taste, texture and presentation and usually I use mergers between several kitchens to obtain in the end a unique and surprising dish.     Having booked the chef to provide for 15 of us after a couple of meals it bacame apparent the chef was not going to be able to feed us all in a timely manner. We had to ask him to simplify the menu and then eventually asked him not to cook for the children. Unfortunately despite these adjustments the chef also made his own shortcuts such as prechopped onions and vegetables aswell as prepared jar sauces from the shop and despite telling me the hummus was homemade provided me a food receipt which demonstrated the untruth. We did not complain as it is nort our way. But hopefully this feedback provides you much constructive insight... and perhaps a thought that greater regulation by chefxchange of the chef to ensure a meeting of the clients expectations. Perhaps even a call or email mid booking to provide feedback. We had high expectations of the process and considered a weekly booking back at home if it went wel. As yet we remain to be convinced. Perhaps if we had known the chef does not get paid until after the event then that may have prompted us to provide more and earlier feedback. The only other query is that the fee on booking shows as 3% but the chef said it was 15%- which is it?

    Chef Albertto is really efficient in his way of replying and understanding the menu that would best suit you. The cuisine was really good and beautifully presented. We really enjoyed our night and would definitely do the experience again.

    We were happy to have chef Albertto since it was very short notice booking. He was recommended to me by Karl. He sent me a list of menu with proposal. He was flexible to fulfill our needs. Was easy to communicate as well as he replied quick. At the day of the event I got a call from the chef one hr before he was supposed to arrive and told me that unfortunately there is a loss in his family and he has to take his wife to the airport. Which is understandable and also unpredictable. I cannot blame the chef because he was late since he had a big reason for it. Dinner didn’t go as we planned only because of that. But when he arrived he started preparing things ASAP. I had my staff by his side incase if he needed help. I don’t know if they did or not to be frank since I had to entertain the guest that came on time! We had dinner 2hrs later , it was a long night but the food was good. We decided to go with more of a gastric experience , fine dining. And it went well. We were happy at the end anyway Also, chef Albertto was kind enough to offer his services without any charge to makeup for what happened. I would like to thank Karl for being so much involved in the whole process of hiring the chef. It was my first time and without him guiding me it would have taken me longer to decided. I’m planning to use more chefs from the chefxchange definitely. Great experience Thank you

    It was our first experience with Chefxchange and what a great one. It was a very last minute order but Chef Albertto was super responsive responsive - to an extent that he stayed up till after midnight to help me get everything organized for my wife's birthday dinner the day after. Whilst here he was very engaging and flexible and provided a social experience in addition to excellent food and cooking. Taste and presentation was top notch and he demonstrated his sincere passion for cooking as well as pleasing his guests and making it an overall excellent experience. Not cheap but great value. Additional compliment to Karl the organizer who also was being very helpful and service minded.
