Summary of where the Chef’s cuisine is inspired from and how he/she goes about expressing it
I take inspiration from the Nipo Brasileiro culture of Japanese Immigrants to Brazil. They make sushi using the ingredients available to them and have put their own spin on the traditional maki rolls. Ingredients such as tropical fruits, chili, Brazilian beef, cream cheese and others have given a tropical and delicious twist to a much loved comfort food. Allow me to share these flavours with you.

How did the Chef learn how to cook and what is his story?
It all started for me in the Philippines as a kitchen steward but I learned the ropes very quickly and came to Dubai in 2010 as a commis sushi chef for Sushi Counter where I mentored with their head chef until 2014, I then made the switch to Japengo Cafe in Madinat Jumeirah as the Chef de Partie at their sushi bar. I have applied all that i've learned into this new adventure of becoming a home and event sushi chef and am happy to share all my stories and culinary learnings with you.
