I come from the Provence region in France where the classic techniques of French cooking meet the extraordinary Mediterranean products and the influences from the Italian cuisine. I now head Boca, where the Cuisine form Italy, France and Spain are proudly represented in a relax and trendy environment. I am also very familiar with the cuisine of the Basque country having worked for a long time at Club Gascon, Michelin starred London restaurant, that excels in modern cuisine from French Gascony but also from French and Spanish Basque country.

How did the Chef learn how to cook and what is his story?

I wanted to be a chef at a very early age, actually, I wanted to be a chef and a gardener so I can grow the food I would serve to my guests. This came from the fact that I used to eat very well as a child, growing up in Nice , and a few years in Gascony, my parents would make me sample some of the best specialties from there, also, my mom and my grandma are great cook and I used to watch them a lot as a kid. I therefore started to work as a cook when I was 15 years old while at the same time attending a culinary school.

    More than expected! Chef maxime made my husbands bday extra special. Right from the beginning, planning and communicating were easy and the chef understood all my requirements. He even paid me a visit so as to be familiar with my kitchen and plan the dining table setting. The food was right in time and very delicious. Presentation was excellent. Thank you chefxchange for your professionalism with your customers and providing an amazing service I didn't know exist in Dubai. That was our first time and def won't be our last. Thank you

    I would firstly like to thank Chef Exchange for coming up with such an innovative solution. Really easy to use and a great platform so kudos to the team behind it! Chef Maxime came highly recommended but I have to say overall I did not have a great experience. I planned a 12 person sit down dinner at my home with a high budget and a good brief to the Chef. We worked together and prepared a great menu and the chef came home a couple of times prior to the dinner to prep. I was quite impressed. The chef even recommended a great bartender, Tatiana. She put together a great list of cocktails she would make on the evening and bartend throughout the night. On the day of the event is when everything went downhill. The event start time was 7pm. The Chef showed up at 6.15pm fully unprepared. The bartended Tatiana showed up at 7.15pm AFTER the guests. She rushes down to prepare and apologises to us all. From 7-9pm she only makes us 2 rounds each, she was EXTREMELY SLOW. Again, un prepared. As we sat down at 9pm she realized the white wine wasnt chilled - this is due to her tardiness so we just had red. The first course wasn't served until 930pm and Tatiana the bar tender disappears. I go down to the kitchen and she's assisting the chef cook ALONG with two members of my staff!! The kitchen is a disaster and the chef is BEYOND stressed. An utter disaster. So my wife and I had to pour drinks for our guests the whole night even though we paid top money for this bartender. And since chef maxime came late and was severely unprepared he was using my home staff to assist him. Each course came out 30 mins late. It was a mess and as a host I had the worst time and I obviously had to pay the bill. The food portions for MASSIVE so most guests were full after the second course. Bear in mind we had 4 courses and 2 deserts. ALL were late. The Chef didnt have time to prepare the 2nd desert so we never even saw that.. Let me say though that the food was excellent. Absolutely excellent food. But the stress and trauma that me the host went through was not worth it even one bit even though my guests were happy. It's quite unfortunate because The Chef and Tatiana are good people and the food was great but the whole experience and evening for me was a massive fail. Karl the founder was kind enough to hear me out and was very accessible the entire time. He's a gentleman and I really appreciate and respect the way he handled it. I wish him and their team the best of luck in the future.

    The experience at the popup restaurant was fantastic! So nice to watch Chef Maxime's intricate culinary preparations, and even better to eat and enjoy them. The Moroccan inspired duck was particularly delightful, and paired with some solid Lebanese wines I'd not tried before. Overall a great experience!

    Maxime have adapted for Tarte aux Poires a special cold menu rich in sea food and vegetables, with a link to his dear Mediterranean for purpose to serve fashionistas and bloggers over a private dinner. Setting plates was a live experience by it's own, showing Maxime's manoeuvres over plates. The 30+ invitees were delighted with the 4 courses menu. Maxime attitude, work flow and food culture is nothing less than the base of world renowned stared institutions - he was always productive, supportive, He was always making things possible, tasty and beautiful.

    We had a fantastic anniversary meal cooked by Max. The food was out of this world! The menu was completely suggested by Max and what a suggestion it was. Every course was executed beautifully with finesse. The flavour combination and texture worked very well together. I cannot recommend Max highly enough. We will definitely book his services again.     Chef Maxime did a pop up dinner for 35 guests at our restaurant Mario e Mario. The chosen menu was Italian themed and the dishes were exceptional, especially the chilled minestrone and the quail rossini with polenta. The pistachio tarte was fantastic.

    The 4 course dinner was amazing and the experience wonderful! My guests were completely delighted as every course was so delectable and nicely presented. His Soupe au Pistou Glacée was very refreshing and the Beef Braisé au vin Rouge served with delicious gnocchi was beyond expectations! Chef Maxime is a fantastic Chef, enjoyable and very talented. I highly recommend him.

    It is hard to express how impressed I was by Chef Maxime. I hosted a dinner for 26 people and worked hand in hand with the Chef to design a very exclusive menu for my guests. Chef Maxime sourced very refined and fresh ingredients and delivered a Michelin star experience in my own home. The food, the plating, the combination of flavours blew everyone's mind. The lobster and truffle green ravioli as well as the lamb rack on a puree of asparagus and green olives were memorable! Looking forward to hosting again with Chef Maxime

    It was a great pleasure having Chef Maxime in my open kitchen cook g for us. Food was delicious! Chef Maxime issmooth and easy going temper. He adapted himself quite easily tin my kitchen...as if he s been already there. I would have skipped the black rice dish ( that was excellent) because it was too much food. Hope you ll come back soon Chef!!!

    It was the first time that we have used a private chef in Dubai and would definitely do it again, Chef Maxime created the perfect 'classic British' menu that we requested for our dinner party of 6, the Beef Wellington was delicious as was the rest of the food. I liked the way everything was organised beforehand through the Chefexchange website and that all I needed to do was set the table and I could spend the whole evening with our guests rather than in the kitchen!

    Chef Maxime provided Michelin class experience for our dinner party. Food was inventive without being pretentious, dishes were plated beautifully and tasted divine. We had quite a few challenging dietary requirements, and Chef Maxime hit the mark on every one of them . I highly recommend Maxime as he is not only quite a wizard in the kitchen, but also very personable and warm individual.

    Chef Maxime, helped select a great menu before the event (an Italian-themed family birthday) and on the day was absolutely superb; the food was incredible (people still talk about it days after the event!), the organisation in the kitchen and between the courses was great and overall Maxime and his assistant created a perfect meal for a family celebration. Thank you!

    This was our first experience with ChefXchange and we immensely enjoyed the service and food prepared by Chef Maxime.     This one of the loveliest culinary experiences that we as a family would cherish for a long time to come. The reason why I booked Chef Maxine is because I love Boca and wanted to actually see whether the same experience could be replicated at home. Not only was it replicated, the evening surpassed all my expectations. I don't remember when was the last time we as a family sat by the table for hours and just let Chef Maxine pamper us by bringing each dish to the table. I love interacting with chefs but to interact with a chef who is cooking for us, that too in our own kitchen - that was a novel experience. We loved the experience so much that we gifted a Chef XChange voucher to a friend on her special occasion.
