Having traveled to Syria and mainly Aleppo, tasting all the local dishes was a great source of inspiration. Also having moroccan, italian, french and iranian friends, we used to exchange recipes, cooking together and exploring new tastes.... I was one of the first clients in Souk el tayeb in Lebanon 15 years ago, it is the organic market .. and going there every saturday to shop, buy, smell, taste and try every handmade product from all over Lebanon is also a very important source for me. How did the Chef learn how to cook and what is his story?
My mom is a big inspiration for me. Used to admire the big feasts during the family gatherings lunches on Sundays then she moved to Syria , I spent a lot of time in the spices market and browsed a lot of pastry shops and restaurants, took notes of many dishes, especially in Aleppo and same in New York, Doha and Istanbul
