How did you start your journey?
Traditional and modern Indian cooking spanning all four corners of the country to put things in a nutshell! Huge repertoire of authentic dishes including Goan, Dravidian, Tamil, Kerelan, Rajasthani, Bengali, North west Frontier cuisine, populist street foods and menus and dishes based on Ayurvedic concepts of doshas and pithas.
Where is your cuisine inspired from?
My grandmother inspired me to cook and I joined professional cookery school in 1998 and started cooking at the world number 1 the Oberoi Rajvilas. I have moved around cooking at places like the Cinnamon Club, Rosewood London to name a few and have done various stages with renowned chefs like Nigel Haworth, Simon Rogen, Vivek Singh, Christopher Hache, Amandine Chaignot and Bjorn Van Der Horst. Currently cooking at Michelin starred Gymkhana as Head Chef.
